Nothing beats a warm slice of banana bread (or any warm bread actually) with some homemade organic butter generously spread to each corner… Can you tell this is my weakness 🙂 This recipe allows for some guilt free indulgence with a little dark chocolate kick that’ll sort out that sweet craving.
You will need:
3 Over ripe bananas
1 Cup Coconut flour
Half cup organic butter
Half a cup of dark choc chips (75% or higher)
Pinch of salt
1 Tbsp vanilla extract
Heat oven to 175º
In a food processor, blend all of the ingredients (except the coconut flour and choc chips) until smooth.
Pour the mixture into a bowl and sieve in the coconut flour. Then gently combine the choc chips with a spatula until evenly mixed.
Spoon the mixture into a small greased loaf or silicone tin and bake for approx 40mins. If the mixture starts to brown on top simply cover with foil. The bread is ready when a toothpick placed in the middle comes out clean.
