The name is a mouthful but trust me, so are these babies! I wish I could take credit for this recipe but I found it on paleohacks.com and had to try it out.
Coconut flour is a tricky ingredient to bake with and many of my dishes have landed in the bin but this one turned out beautifully.
You will need:
2/3 cup coconut flour
1 tablespoon of honey
1 cup coconut milk
8 eggs
1/4 teaspoon baking soda
Method:
In a food processor, blend all of the ingredients until smooth.
Heat a frying pan on medium heat and add one teaspoon of coconut oil or non stick spray. Heap a large scoop of batter into the frying pan and cook until the top of the pancake starts to bubble. Flip the pancake over and cook for a seconds until cooked through.
Repeat with remaining batter then serve with a drizzle of honey and lemon juice.
