I posted this recipe on my Facebook page a few weeks ago and got such great feedback, so I’ve decided to add it here for anyone that may look for it.
CHOC PROTEIN BARS
In a medium bowl add:
1.5 cups of rolled oats
1 cup mixed unsalted nuts (I used crushed macadamia and almonds)
Half cup dried coconut
Half cup small dark chocolate nibs (75% or higher)
Half a cup of salt & sugar free peanut butter (warmed in microwave to soften)
4 tablespoons Melted coconut oil
1 scoop #USN Lean8 vanilla whey
Mix all ingredients together until the consistency is sticky and it holds it’s shape. If it’s too dry, add a few spoons of warm water to the mixture. If it’s too wet, add some more dry ingredients. Shape into a flat non stick dish – about half a cm thick – and flatten with spatula. It should compact quite easily without breaking up and it shouldn’t stick to the spatula either. Leave In the freezer to set for about 10 minutes.
In a small bowl mix:
1 cup dark choc nibs (melt in the microwave)
Half cup dark cacao powder
2 tablespoons of coconut oil
A few sachets of sweetener eg: canderel or stevia
Mix all Choc ingredients together until smooth and thick. Make sure you taste it to check sweetness.
Take oat mixture out of the freezer and pour chocolate mixture over it. You’ll need to be quick because the cold oats will set the chocolate quickly. Smooth with a spatula and pop back into the freezer for about half an hour. When the chocolate has set, cut into desired squares and store in the fridge.
Don’t overdo it though, a small bar at time will do the trick!
